Egg Pie

Ingredients

  • 10 eggs

  • 750 ml milk

  • ½ kg feta or fresh cheese (chlorotyri)

  • 150 g self-rising flour or semolina

  • Oil or melted butter for the baking pan, plus 2-3 tablespoons for the mixture

  • Salt (optional, if the cheese is not salty)

 

Instructions

In a mixing bowl, beat the eggs with the milk. Then crumble the cheese by hand and add it to the mixture, along with the remaining ingredients. Pour the mixture into a greased baking pan. Bake at 180°C (350°F) on the first oven rack, using only the lower heating element, for about half an hour, until the pie turns golden brown.

Lemony Salted Cod with Potatoes

Ingredients

  • 1 sheet of salted cod (about 1.5 kg)

  • 6-7 potatoes (cut into wedges)

  • 1 large onion

  • 12-15 small pearl onions (or 4-5 medium onions, quartered)

  • 2 garlic cloves

  • 200-250 ml olive oil

  • Pepper

  • Water

  • Juice of 2 lemons

 

Instructions

Desalt and clean the cod thoroughly. In a large pot, first layer the potatoes, then evenly place the cod on top. Finely chop the large onion and garlic, and add the small onions as well. Pour in the olive oil, add pepper, and add enough water to just reach the ingredients in the pot. Avoid adding salt, as the fish is already salty. Simmer until the potatoes are cooked, about half an hour. Once done, turn off the heat and add the juice of two lemons.

Ladopita (Olive Oil Pie)

Ingredients for a 38 cm pan

  • 1200 ml olive oil

  • 1500 g all-purpose flour

  • 25 g sesame seeds

 

For the Syrup

  • 1200 ml water

  • 1200 g sugar

  • 2 teaspoons ground cinnamon

  • 1/2 teaspoon ground cloves

  • 3 tablespoons honey

Final touch

  • 100 g sugar

  • 1 teaspoon ground cinnamon

  • 1/4 teaspoon ground cloves

 

Instructions

  1. In a saucepan, combine all the syrup ingredients, bring to a boil, and let it simmer for five minutes. Skim off any foam that forms.

  2. In a large pot, heat the olive oil until it starts to smoke, then let it heat for an additional five minutes. Quickly add the flour to the hot oil, stirring constantly with a wooden spoon to prevent the flour from burning. Reduce the heat slightly and continue to stir for about five minutes.

  3. Gradually add the hot syrup to the mixture with caution, as it may splatter. Stir continuously. Once all the syrup is absorbed, remove the pot from the heat and keep stirring until the mixture absorbs all the syrup completely.

  4. Sprinkle half of the sesame seeds on a baking pan, spread the mixture evenly over it, and use parchment paper to smooth it out. Sprinkle the remaining sesame seeds on top and smooth with parchment paper again. Cut the mixture into diamond shapes, and if desired, place a blanched almond in the center of each piece.

  5. Bake in a preheated oven at 200°C (392°F) with lower and upper heat or 160°C (320°F) with a fan for 50-60 minutes.

  6. In a small bowl, mix the sugar, cinnamon, and cloves. As soon as you take the ladopita out of the oven, sprinkle it with this mixture. Allow it to cool, then transfer it to a serving plate.

Alternatively, you can skip baking and make spoonfuls of the mixture (like halva) and sprinkle with sugar, cinnamon, and cloves.
