750 ml of milk
½ kg feta or chlorotyri (fresh cheese or mizithra)
150gr flour or semolina
Olive oil or butter for the pan and 2-3 tbsp. soup for the mixture.
If the cheese is not salty, you may need to add salt.
In a bowl, we beat the eggs with the milk, then we rub the cheese with our hand and add it as well as the other ingredients.
We bake at 180C degrees, top/bottom Heating, top rack, for about half an hour, until our pie is golden brown.
lemon cod with potatoes
1 sheet of cod (about 1.5 kg, salted)
6-7 potatoes (wedges large)
1 large onion
12-15 small onions, or 4-5 medium (cut into 4)
2 cloves garlic
200 - 250 ml olive oil
We have removed the salt from the cod. (Salt cod must be soaked overnight before cooking to remove the salt. Place it in a bowl with cold water to cover and soak for 24 hours, changing the water three or four times)
Put the potatoes in the pot first, then we put the fish, evenly. Finely chop the large onion and garlic and add the small onions. Add the olive oil, pepper, and water until it is visible in our pot. We do not add salt because the fish itself is still salty. Boil until the potatoes are cooked, about half an hour and as soon as we turn it off, add the juice of two lemons.

The oil-pie is the traditional dessert of Meganisi.
4 glasses of olive oil
1kg and more flour for all uses
For the syrup
4 cups of sugar
4 glasses of water
3 tablespoons honey
Cinnamon (2 tsp grated or 2-3 sticks)
Clove (1 tsp grated or 5-6 pieces)
Sesame for the finish
Put all the ingredients for the syrup in a pot and boil it. When it boils, skim it and be careful not to spill it because it swells. When the syrup boils, if we have put whole pieces of spices in it, remove them and leave them aside.
Put the oil in another pot and let it reach a high temperature, almost reddening a little. Then add the flour very carefully little by little, so as not to burn, and stir it continuously. After mixing the flour with the oil for about 10 minutes, start adding the syrup. Be very careful because it will boil immediately. Stir the mixture very well until the syrup completely disappeared.
